Ingredients
– 1 1/2 cups crushed graham crackers
– 1/2 cup unsalted butter, melted
– 1/4 cup granulated sugar
– 3 (8 oz) packages cream cheese, softened
– 1 cup powdered sugar
– 1 cup Baileys Irish Cream
– 1 teaspoon vanilla extract
– 1 cup heavy whipping cream
– Chocolate shavings for garnish (optional)
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, combine crushed graham crackers, melted butter, and granulated sugar. Mix well.
- Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- Bake the crust for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the cream cheese until smooth and creamy.
- Gradually add powdered sugar, mixing until well combined.
- Add Baileys Irish Cream and vanilla extract, mixing until smooth.
- In another bowl, whip the heavy cream until stiff peaks form.
- Carefully fold the whipped cream into the cream cheese mixture until just combined.
- Pour the filling over the cooled crust and smooth the top.
- Refrigerate the cheesecake for at least 4 hours or overnight until set.
- Before serving, garnish with chocolate shavings, if desired.
Notes
– For a stronger Baileys flavor, you can add an extra 1/4 cup of Baileys to the filling.
– This cheesecake can be made a day in advance for best results.
