Ingredients

  • – 32 oz frozen tater tots
  • – 2 cups shredded cheddar cheese
  • – 1 cup shredded mozzarella cheese
  • – 1 can (15 oz) black beans, rinsed and drained
  • – 1 jalapeño, sliced
  • – 1/2 cup sour cream
  • – 1/4 cup green onions, chopped
  • – 1/4 cup fresh cilantro, chopped
  • – 1 tsp taco seasoning
  • – Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Spread the frozen tater tots on a baking sheet in a single layer.
  3. Bake for 25-30 minutes or until golden and crispy.
  4. Once the tater tots are cooked, remove them from the oven.
  5. Sprinkle the shredded cheddar and mozzarella cheese evenly over the tater tots.
  6. Add black beans and jalapeño slices on top of the cheese.
  7. Return to the oven and bake for an additional 5-7 minutes, until the cheese is melted.
  8. Remove from the oven and drizzle sour cream over the nachos.
  9. Garnish with chopped green onions and cilantro.
  10. Serve immediately and enjoy!

Notes

 

Feel free to customize your nachos with additional toppings like avocado, salsa, or your favorite hot sauce.

For a spicier kick, add more jalapeños or a sprinkle of cayenne pepper.
