Ingredients
4 boneless, skinless chicken breasts
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning
2 large eggs
1 cup marinara sauce
1 cup shredded mozzarella cheese
Salt and pepper to taste
2 tablespoons olive oil
Instructions
1. Preheat your oven to 400Β°F (200Β°C).
2. In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
3. In another bowl, beat the eggs.
4. Dip each chicken breast into the eggs, then coat with the breadcrumb mixture.
5. In a skillet, heat olive oil over medium heat. Cook each chicken breast for 3-4 minutes on each side until golden brown.
6. Place the chicken on a baking sheet. Top each piece with marinara sauce and mozzarella cheese.
7. Bake in the oven for 15-20 minutes or until the chicken is cooked through and the cheese is melted.
Notes
Serve with pasta or a side salad.
You can substitute the breadcrumbs with panko for extra crunch.
