Ingredients
1 lb ground beef
2 cans (15 oz each) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 can (28 oz) diced tomatoes
1 onion, chopped
2 cloves garlic, minced
2 tablespoons chili powder
1 tablespoon cumin
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper (optional)
1 cup beef broth
1 bell pepper, chopped
Instructions
1. Brown the ground beef in a skillet over medium heat, then drain the fat.
2. Add the browned beef, beans, diced tomatoes, onion, garlic, chili powder, cumin, salt, pepper, cayenne pepper, beef broth, and bell pepper to the crockpot.
3. Stir to combine all ingredients.
4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
5. Serve hot, garnished with cheese, sour cream, or cilantro if desired.
Notes
For a vegetarian option, substitute the ground beef with textured vegetable protein or additional beans.
