Ingredients

– 6 large eggs

– 4 strips of bacon

– 1 cup spinach, chopped

– 1/2 bell pepper, diced

– 1/4 cup onion, diced

– 1/2 cup shredded cheese (cheddar or your choice)

– Salt and pepper to taste

– 1 tablespoon olive oil

Instructions

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels.
  2. In the same skillet, add olive oil. Sauté the onions and bell pepper until softened, about 3-4 minutes.
  3. Add the chopped spinach and cook for another 2 minutes until wilted.
  4. In a bowl, whisk the eggs with salt and pepper until well combined.
