Ingredients
– 6 large eggs
– 4 strips of bacon
– 1 cup spinach, chopped
– 1/2 bell pepper, diced
– 1/4 cup onion, diced
– 1/2 cup shredded cheese (cheddar or your choice)
– Salt and pepper to taste
– 1 tablespoon olive oil
Instructions
- In a large skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels.
- In the same skillet, add olive oil. Sauté the onions and bell pepper until softened, about 3-4 minutes.
- Add the chopped spinach and cook for another 2 minutes until wilted.
- In a bowl, whisk the eggs with salt and pepper until well combined.
- Pour the eggs into the skillet with vegetables and cook, stirring gently, until just set, about 4-5 minutes.
- Crumble the bacon and add it to the eggs, then sprinkle cheese on top and let it melt for a minute.
- Serve warm with toast or your favorite breakfast sides.
