Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, mix the milk, egg, melted butter, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined (a few lumps are okay).
- Preheat a non-stick skillet or griddle over medium heat and lightly grease it.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown on the other side, about 1-2 minutes more.
- Remove from the skillet and keep warm while you cook the remaining pancakes.
- Serve warm with your choice of toppings.
