Ingredients
1 lb ground beef
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1 teaspoon cumin
1 can (15 oz) black beans, drained and rinsed
1 cup corn (frozen or canned)
2 cups cooked brown rice
Fresh cilantro for garnish
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add chopped onion and sauté until translucent, about 5 minutes.
3. Add minced garlic and cook for an additional minute.
4. Add ground beef, salt, pepper, paprika, and cumin. Cook until the beef is browned, about 7-10 minutes.
5. Stir in black beans and corn, cooking until heated through, about 3 minutes.
6. In meal prep containers, layer cooked brown rice, followed by the beef mixture.
7. Garnish with fresh cilantro before sealing containers.
8. Allow to cool before refrigerating. Store for up to 5 days.
