- 1 Β½ cups warm water (110Β°F to 115Β°F)
- 1 packet (2 ΒΌ teaspoons) active dry yeast
- 1 tablespoon granulated sugar
- 4 cups all-purpose flour
- 1 teaspoon salt
- Β½ cup baking soda
- 1 large egg (beaten, for egg wash)
- Coarse sea salt (for sprinkling)
Instructions
- In a large bowl, combine the warm water, yeast, and sugar. Let it sit for about 5 minutes until foamy.
- Add the flour and salt to the yeast mixture and mix until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth.
- Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
- Preheat your oven to 450Β°F (232Β°C). Line a baking sheet with parchment paper.
- In a large pot, bring 10 cups of water and the baking soda to a boil.
- Punch down the risen dough and divide it into small pieces (about 1 inch each).
- Boil each piece of dough in the baking soda water for about 30 seconds.
- Remove them with a slotted spoon and place on the prepared baking sheet.
- Brush the tops with the beaten egg and sprinkle with coarse sea salt.
- Bake in the preheated oven for 12-15 minutes or until golden brown.
- Let cool slightly before serving.

Serve with mustard, cheese dip, or your favorite dipping sauce. Pretzel bites are best enjoyed fresh but can be stored in an airtight container for a few days.
