Mini Meatloaf Muffins

Ingredients

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 cup breadcrumbs
  • 1/2 cup ketchup
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 2 cloves garlic, minced
  • 1 large egg
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried Italian herbs
  • 1/4 cup brown sugar (for topping)
  • 1/4 cup ketchup (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, ground pork, breadcrumbs, ketchup, Parmesan cheese, onion, bell pepper, garlic, egg, Worcestershire sauce, salt, pepper, and Italian herbs. Mix until well combined.
  3. Grease a muffin tin with cooking spray or oil.
  4. Spoon the meat mixture evenly into the muffin tin, filling each cup about three-quarters full.
  5. In a small bowl, mix brown sugar and ketchup for the topping, then spoon it over each meatloaf muffin.
  6. Bake for 25-30 minutes, or until the internal temperature reaches 160°F (70°C).
  7. Let cool for a few minutes before removing from the muffin tin.
  8. Serve warm and enjoy!

Notes

For added flavor, you can incorporate diced jalapeños or cook chopped bacon pieces into the meat mixture.

These muffins freeze well; just reheat in the oven when ready to serve.
