- 1 pound ground beef
- 1/2 pound ground pork
- 1 cup breadcrumbs
- 1/2 cup ketchup
- 1/2 cup grated Parmesan cheese
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper
- 2 cloves garlic, minced
- 1 large egg
- 2 teaspoons Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried Italian herbs
- 1/4 cup brown sugar (for topping)
- 1/4 cup ketchup (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground beef, ground pork, breadcrumbs, ketchup, Parmesan cheese, onion, bell pepper, garlic, egg, Worcestershire sauce, salt, pepper, and Italian herbs. Mix until well combined.
- Grease a muffin tin with cooking spray or oil.
- Spoon the meat mixture evenly into the muffin tin, filling each cup about three-quarters full.
- In a small bowl, mix brown sugar and ketchup for the topping, then spoon it over each meatloaf muffin.
- Bake for 25-30 minutes, or until the internal temperature reaches 160°F (70°C).
- Let cool for a few minutes before removing from the muffin tin.
- Serve warm and enjoy!
Notes
For added flavor, you can incorporate diced jalapeños or cook chopped bacon pieces into the meat mixture.
These muffins freeze well; just reheat in the oven when ready to serve.
