Ingredients
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes (14.5 oz)
- 1 cup corn (frozen or canned)
- 2 cups spinach, chopped
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add diced onion and garlic, sauté until soft, about 3 minutes.
3. Add ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes.
4. Stir in bell pepper, diced tomatoes, corn, chili powder, cumin, salt, and pepper.
5. Simmer for 10 minutes, letting the flavors meld.
6. Add chopped spinach and cook until wilted, about 2-3 minutes.
7. Serve hot, garnished with fresh herbs if desired.

For a spicier kick, add jalapeños or hot sauce.
