Ingredients
🍩 Donut Dough
- 2 ½ cups all-purpose flour
- 2 ¼ tsp instant yeast
- ¼ cup granulated sugar
- ½ tsp salt
- ¾ cup warm milk
- 2 egg yolks
- ¼ cup unsalted butter, softened
🍰 Cheesecake Filling
- 8 oz cream cheese, softened
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- ¼ cup heavy cream
🍓 Strawberry Compote
- 1 cup chopped fresh or frozen strawberries
- 2 tbsp granulated sugar
- 1 tsp lemon juice
- Optional: 1 tsp cornstarch + 1 tbsp water (for thickening)
🍭 Coating
- ½ cup granulated sugar (for rolling)
- Graham cracker crumbs (optional, for extra cheesecake flavor)
- Optional glaze: ½ cup powdered sugar + 2–3 tsp milk
Instructions
1️⃣ Make the Dough

Combine warm milk, sugar, and yeast. Let sit for 5 minutes until foamy.

Add egg yolks, flour, salt, and mix until dough forms.

Knead in softened butter until smooth. Cover and rise 1–1.5 hours.
2️⃣ Prepare Fillings

Beat cream cheese, powdered sugar, and vanilla. Add cream and beat until smooth. Chill for piping.

Simmer strawberries, sugar, and lemon juice for 10–15 minutes. Thicken with cornstarch if needed. Cool completely.
3️⃣ Shape & Fry Donuts

Roll out dough and cut into rounds. Let rise 30–45 minutes.

Heat oil to 350°F (180°C) and fry donuts 2–3 minutes per side. Drain and roll in sugar while warm.
4️⃣ Fill & Garnish

Use piping bag to fill each donut with cheesecake, then strawberry compote.

Top with crushed graham crackers or drizzle glaze over the top.

Chill your fillings before piping to keep them thick and stable.

For less mess, fill from the side using a long piping tip.

These donuts are best enjoyed fresh but can be stored for 2 days in the fridge.

You can bake them instead of frying at 375°F for 12–15 minutes—texture will be less crispy but still delicious.
