Stuffed Bell Peppers Recipe

Delicious stuffed bell peppers filled with a savory mixture of ground beef, rice, and spices, topped with cheese. A perfect comfort food!

Ingredients

  • 4 large bell peppers (any color)
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 can (15 oz) diced tomatoes
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

1. Preheat your oven to 375Β°F (190Β°C).

2. Cut the tops off the bell peppers and remove the seeds and membranes.

3. In a skillet, heat olive oil over medium heat. SautΓ© onion and garlic until translucent.

4. Add ground beef and cook until browned. Drain excess fat.

5. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well.

6. Stuff each bell pepper with the beef and rice mixture, packing it tightly.

7. Place the stuffed peppers in a baking dish and cover with foil.

8. Bake for 30 minutes. Remove foil, top with cheese, and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

9. Serve hot and enjoy!

Notes

You can customize the filling by adding vegetables or using ground turkey for a lighter option.
