Ingredients
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 pound ground turkey
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 can (28 oz) crushed tomatoes
2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon paprika
Salt and pepper to taste
1 cup chicken broth
1 bell pepper, diced
Fresh cilantro for garnish
Instructions
1. 1. In a large pot, heat the olive oil over medium heat.
2. Add the diced onion and garlic, sautΓ© until softened.
3. Stir in the ground turkey, cooking until browned.
4. Add the kidney beans, black beans, crushed tomatoes, chili powder, cumin, paprika, salt, and pepper.
5. Pour in the chicken broth and add the diced bell pepper. Stir well.
6. Bring to a boil, then reduce heat and let simmer for 30 minutes.
7. Taste and adjust seasoning if necessary.
8. Serve hot, garnished with fresh cilantro.
Notes
For a spicier chili, add diced jalapeΓ±os or a pinch of cayenne pepper.This chili can be made ahead of time and tastes even better the next day!
