Ingredients
🧀 Mac & Cheese Filling
- 1 cup cooked elbow macaroni
- 1 tbsp butter
- ⅓ cup milk
- ¾ cup shredded sharp cheddar cheese
- ¼ cup cream cheese
- Salt & pepper to taste
- Optional: pinch of smoked paprika
🍖 Meatloaf Mixture
- 1 lb ground beef (80/20) or beef/pork mix
- ½ cup breadcrumbs
- 1 egg
- 2 tbsp milk
- 1 tbsp Worcestershire sauce
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt & pepper to taste
🍔 Assembly
- 8–10 slider buns (brioche, Hawaiian rolls, or potato buns)
- Optional glaze: ¼ cup ketchup + 1 tbsp brown sugar
- Toppings: crispy fried onions, pickle chips, slaw, BBQ sauce
Instructions
1️⃣ Make Mac & Cheese

In a saucepan, melt butter. Add milk, cheddar, cream cheese, and seasonings.

Stir in macaroni until fully coated.

Chill mixture for 30–60 mins until firm enough to scoop.
2️⃣ Prepare Meatloaf Mix

In a bowl, combine ground meat, egg, milk, breadcrumbs, Worcestershire, and spices.

Mix gently until just combined.
3️⃣ Form Sliders

Divide meat into 8–10 portions. Flatten each into a patty.

Scoop 1 tbsp mac & cheese into center, fold meat around, and seal well.

Chill sliders for 30 minutes to hold shape.
4️⃣ Cook Sliders

Oven method: Bake at 375°F (190°C) for 20–25 mins on parchment-lined sheet.

Skillet method: Sear 2–3 mins per side, then finish in oven for 10 mins.

Optional: brush glaze on top during final 5 mins of cooking.
5️⃣ Assemble & Serve

Toast buns, add meatloaf slider, top with desired toppings.

Serve hot with fries, slaw, or onion rings.
