Ingredients
Feta cheese – 200g
Eggs – 4
Cherry tomatoes – 300g
Olive oil – 2 tablespoons
Garlic – 2 cloves, minced
Salt – to taste
Black pepper – to taste
Fresh basil – for garnish
Instructions
1. Preheat the oven to 200°C (400°F).
2. In a baking dish, combine the cherry tomatoes, olive oil, garlic, salt, and black pepper.
3. Place the block of feta cheese in the center of the dish.
4. Bake in the preheated oven for about 25 minutes or until the tomatoes are blistered and the feta is golden.
5. Remove the dish from the oven, and make four wells in the mixture.
6. Crack an egg into each well.
7. Return to the oven and bake for an additional 10-12 minutes, or until the eggs are set to your liking.
8. Garnish with fresh basil before serving.
Notes
Serve with crusty bread for dipping. Adjust the baking time for softer or firmer eggs according to preference.
