Ingredients
4 bone-in, skin-on chicken thighs
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
Instructions
1. Preheat your oven to 425°F (220°C).
2. Pat the chicken thighs dry with paper towels to ensure crispy skin.
3. In a small bowl, mix together the olive oil, garlic powder, onion powder, paprika, salt, black pepper, and thyme.
4. Rub the seasoning mixture all over the chicken thighs, making sure to get it under the skin as well.
5. Place the chicken thighs skin-side up on a baking sheet lined with parchment paper.
6. Bake in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
7. Let the chicken rest for 5 minutes before serving.
Notes
For extra crispiness, broil the chicken thighs for the last 2-3 minutes of cooking.
